Homemade Almond Roca

I used to think I didn't like toffee. I didn't like the texture, I didn't like how it stuck in my teeth, and I wasn't very excited about the one-dimensional sweetness. Then I discovered that I'd been eating bad toffee. When I finally had some good toffee, I was amazed! Toffee, when done properly, has a complex sweetness with dark undertones, and a crisp but melting texture. It was a revelation to discover that I actually liked toffee. And in the "more is more" spirit of candymaking, I believe that the only thing better than well-made toffee is...well-made toffee with chocolate and nuts!

Almond Roca is a homemade version of the commercial candy. I now prefer making Almond Roca to buying it, since it's guaranteed to be fresh and I can control the quality of the ingredients. The only problem with this recipe is that it's so good, I find myself compulsively nibbling the scraps and edges, and then crumbing the larger pieces to produce scraps suitable for nibbling. You have been warned!

This version of the classic spicy recipe uses chicken breast chunks instead of wings, so they're easier to eat. The blue cheese dip adds a cooling contrast.

After much research of what I can name my home-made almond roca to put in the market, I found out that name is trade-marked and no one can market anything with that name both “Roca” or “Almond Roca” anywhere in the name. I could not call it Celia’s Roca or Home-made Roca and most certainly not what I originally wanted to call it - Celia’s Home-Made Almond Roca. They produce a version of english toffee and that is the original name of the candy. They came up with that name “Almond Roca” for their version of english toffee. In a nutshell, I would be careful not to put on any website that you are making home made almond roca. It is just toffee, and that name is a brand of toffee. Also after researching trademarks, anything trademarked means they can legally go after you if you use their name.
