Although these bite-sized candies are called "truffles," they are not made from a ganache base like most other truffles. Instead, Raspberry Truffles are built around a base of melted white chocolate, and are predominantly flavored by cream cheese and raspberry preserves. The tartness of the berries and the cream cheese help offset the sweetness of the chocolate, and the crunchy toasted nuts on the outside are a nice contrast to the creamy filling. These can be made with any fruit jam, so feel free to make substitutions if raspberry flavor isn't your cup of tea.
