Orange Caramels

I love the combination of citrus and chocolate. (In fact, I (kind of) joke that I married my husband because his family has a brilliant tradition of giving everyone chocolate oranges in their Christmas stockings. How could I not love someone whose family has such good taste? But I digress.) My point is, these Orange Caramels are fine on their own. Orange juice concentrate and candied orange peel add zest to a rich caramel base, and by themselves they are interesting enough. But! Dip them in chocolate, and they move from "tasty" to "downright delicious." And isn't that a direction you'd want to move in?
