Pink Grapefruit Truffles

Recently I bought a gorgeous, super-ripe pink grapefruit, with the idea that I would make some sort of candy with it. A thorough perusal of my candy books and various websites soon showed me that there are very few candy recipes that involve grapefruit. I don't really understand that--grapefruit has such a great flavor! It's sweeter than limes or lemons, but usually more tart than oranges, which I think makes it a perfect candidate for its own chocolate truffle variety.

Pink Grapefruit Truffles sparkle with the sweet-tart flavor of fresh pink grapefruit. These chocolate truffles have both grapefruit zest and grapefruit juice in them, so the citrus flavor really shines in the sweet chocolate ganache. Top them with a thin drizzle of pink-colored chocolate, and they're as cute as they are delicious.
