Turtle Truffles

Classic Turtle candies consist of a a caramel with pecan halves, covered in chocolate. These Turtle Truffles take those same flavors but present them in a more gourmet form. Rich chocolate ganache encases a soft caramel center, and the whole package is rolled in toasted, chopped pecans, to produce a truffle that has a variety of flavors and textures in every bite. I recommend using the best caramel and chocolate you can find--it makes a big difference in the final product!
