Cinnamon Truffles

I love the combination of cinnamon and chocolate. To me, the earthiness of the cinnamon brings out other subtle undertones in chocolate, and the flavor, when used in moderation, can elevate the taste of all types of chocolate. Truffles are a candy meant to showcase good chocolate, and as such, they are the perfect platform for combining cinnamon and chocolate. These Cinnamon Truffles get a double boost of cinnamon: a cinnamon stick infuses the cream with its spicy essence during a slow simmer, and the truffles are finished with a coating of cocoa powder and ground cinnamon. Serve them with gourmet coffee for the perfect after-dinner touch.
