Adding rosemary to desserts isn't exactly a new idea. At one of my first pastry jobs I was in charge of making rosemary-vanilla shortbread cookies. Hundreds of rosemary-vanilla shortbread cookies a day. In addition to making me never want to see another shortbread cookie in my life, this experience taught me that, when used wisely, rosemary can be a great addition to a sweet treat. Recently I decided to revisit this idea and try my hand at a rosemary candy, with this recipe for Rosemary Caramels.I was a little concerned that adding rosemary to caramels would make them taste too savory, but I shouldn't have worried. These soft, buttery caramels have just a light hint of rosemary flavor. The more assertive flavors are fruity orange zest and salty pistachios. Taken together, all three elements make these caramels uniquely delicious. I'll take them over a shortbread cookie any day!
