Strawberry Shortcake Truffles

My grocery store had a great deal on strawberries this week, so I loaded up my cart with four cartons of berries. Since then we've been enjoying them plain, sliced on cereal, and mixed into salads. Yesterday I made a quick strawberry shortcake with the berries, and that simple dessert reminded me of one of my favorite summertime candy recipes, Strawberry Shortcake Truffles.

This recipe, which uses leftover yellow cake or pound cake, is similar to many cake ball recipes. But instead of mixing the cake with frosting, it calls for actual fresh strawberries to be blended into the cake, along with a little white chocolate. Using real berries gives these truffles a vibrant, fresh-fruit flavor that's just like real strawberry shortcake. This recipe has been rated five stars, and reviewer msclio wrote, "I have never cared for fruit flavored truffles, or fruit flavored candy at all. But these looked so pretty and the recipe so simple, that I had to try them, and they were delicious. I cannot wait to make them again." You should try them too, and see if you agree!
