We all know strawberries make an excellent cheesecake topping, but it turns out that the reverse is also true--cheesecake makes an excellent strawberry filling! Okay, these Cheesecake-Stuffed Strawberries aren't filled with actual cheesecake, per se. That seems logistically tricky. Instead, fresh strawberries are filled with a homemade cheesecake mixture, made from mascarpone cheese flavored with a touch of vanilla and lemon. The filling is light, springy, and the perfect match for the ripe, juicy berries. I love using mascarpone for its rich texture and neutral, slightly sweet flavor, but you can use cream cheese instead if you enjoy that tangy taste.
