I don't know who first thought of combining lemons and poppy seeds, but I want to shake that person's hand. Tiny, crunchy poppy seeds have an earthy flavor that's the perfect balance to tangy lemons. These Lemon Poppy Seed Truffles are made with a white chocolate base that's bursting with real, sweet-tart lemon flavor from lemon zest and lemon extract. To counteract all the fruitiness, the truffles are dipped in white chocolate and rolled in a coating of poppy seeds, which provide a great savory crunch. And finally, a word of caution. If there's one thing I've learned from watching Seinfeld --other than to avoid double-dipping--it's that poppy seed desserts should not be enjoyed before a drug test, so please eat these intoxicating truffles responsibly!
