In the past few months I've featured truffles made from cake, doughnuts, and brownies, and now the time has come to make truffles out of cookies as well. Snickerdoodle Truffles are made from--you guessed it!--soft snickerdoodle cookies, crumbled up and mixed with frosting and a bit of cinnamon. The resulting truffles are dipped in a thin coating of white chocolate, then rolled in a crispy cinnamon-sugar mixture to mimic the look and taste of snickerdoodle cookies.
