Raspberry Fondant

Raspberry Fondant gets all its flavor from real raspberries, so it doesn't suffer from that fake fruity taste many artificially flavored candies do. The strong, tangy raspberry taste and pretty pink color make these a lovely addition to a cream candy assortment. Because it does use real raspberries, the final product has the occasional raspberry seed thrown in the mix. This makes it less than ideal to use as a rolling fondant, unless you like your fondant-covered cakes with a little texture. If you want to try rolling it, or if you're just sensitive to seeds, try pureeing and straining the raspberries and using this liquid instead of just plopping whole berries into the sugar syrup. As Tim Gunn so eloquently says, "Make it work!"
