You asked for it, you got it! Whenever I ask what kind of recipes people want to see, I always get lots of requests for candies without refined sugar. Truthfully, I'm a sugar fiend (I even have a dessert blog called SugarHero, that's how much I love the white stuff) so candies made without sugar are not my strong suit. Fortunately, when I decided to take you up on your requests for healthier candies, I knew just who to call! I contacted my friend Annie Forsyth, who, along with her sisters, writes a blog called Naturally Sweet Recipes. They're experts in crafting desserts out of alternate sweeteners, so I knew she would be able to come up with some killer candy recipes-- and she did not disappoint! All week I'll be featuring her candy recipes, naturally sweetened with ingredients like coconut sugar, agave nectar, and xylitol.
First up: Cinnamon Honey Caramels! Unlike most caramel recipes, which are made by cooking sugar to a high temperature until it caramelizes, these soft, luscious caramels get their fragrant sweetness and chewy texture from honey. They're finished with a dash of cinnamon extract, to add a little bit of spice. Pack up your granulated sugar for a few days, and give these rich and chewy caramels a try!
