Coconut Meringue Bark (oh hush, I hear that snickering. I assure you that it is beautiful...on the inside) is the interplay between the crispy meringue shell and the slightly chewy toasted coconut on the inside. Now I love meringues, but sometimes it seems, as Gertrude Stein said, "there is no there there." They vanish in your mouth as soon as you take a bite. Not so with these sweetly tropical shards! They hang around just long enough to impart their coconut flavor before dissolving and making you crave another bite, and then another...
