I'm not an ice cream fanatic, but when I crave the cold stuff, it's usually mint chocolate chip I want. I just love the combination of refreshing, frosty mint flavor and chunks of semi-sweet chocolate. I tried to recreate that feeling of brisk mint and chunky chocolate in this recipe for Mint Chocolate Chip Truffles. The truffles have a base of white chocolate instead of the more traditional milk or dark chocolate, and the mild white chocolate can let the pure mint flavor shine through. I used the smallest miniature chocolate chips I could find so that they didn't overwhelm the truffles, but you could use a finely chopped chocolate bar instead. I eat a lot of truffles (hard life) and let me tell you, these are in my top 10 list of all-time favorite truffles. But shhh, don't tell the other truffles. It's our little secret.
