S'mores Marshmallows

A few weeks ago my family got together for a short summer vacation. On the last night, we built a fire in my brother's outdoor fire pit and toasted marshmallows for s'mores. We mainly stuck to the classic chocolate-mallow-graham configuration, but I did try sneaking a peanut butter cup or two into my s'mores--it's actually pretty good! We stayed up late talking around the dying fire, the smell of smoke in our hair, our fingers sticky from charred marshmallows. It was a beautiful evening and a fun reminder that no matter how much we age, some pleasures, like teasing your siblings and toasting marshmallows for s'mores, never get old.

Given this, it should come as no surprise that s'mores have been on my mind recently! S'mores recipes and s'mores-inspired foods are everywhere--I even have a whole page devoted to s'mores-inspired candies here. Despite the s'mores s'morgasbord, I would venture to guess that this recipe for S'mores Marshmallows is one of a kind.

Instead of incorporating three separate components, these marshmallows have three layers of s'mores flavor in each bite. The bottom layer is made with brown sugar, honey, and graham crumbs, for a sweet flavor that tastes surprisingly like graham crackers! (Really--it's crazy!) The middle layer is classic vanilla, and the candy is finished with a final layer of chocolate marshmallow. I enjoyed eating them plain, but now I'm wondering how they would be atop classic s'mores. I just wish I had made them a few weeks ago so I could have tried them with my family!
