If you think about it, marzipan and truffles are a perfect match. Marzipan has a lovely strong almond flavor, and a nice chewiness, but it can be intensely sweet and a little one-note. Truffles are soft, and smooth, with a rich chocolate taste, but they can lack an interesting texture, and eating a few can sometimes feel like chocolate overload. So why not combine the two, and enjoy the best of both kinds of candy in one small package? Why not, indeed? In this recipe for Marzipan-Covered Truffles, I wrapped small chocolate truffles with a thin layer of marizpan, and then dunked them in chocolate. The marzipan gave them a great nutty taste, and a slightly chewy texture, while the chocolate kept the marzipan from tasting too sweet and boring. This is a great candy for nut lovers!
