Chocolate and brittle are hardly strangers. Lots of brittle recipes call for a coating of chocolate on top of the brittle--like this most excellent Salted Chocolate Peanut Brittle, for instance. However, it's much more rare to find a brittle recipe that contains chocolate itself. Why the oversight? Brittle is delicious, chocolate is delicious, wouldn't the combination of the two be...you guessed it...delicious? Turns out the answer is yes! This Chocolate Nut Brittle has a double dose of chocolate flavor, from cocoa powder inside the brittle and a healthy drizzle of semi-sweet on top. The chocolate taste isn't overwhelming, but it adds a nice richness and slightly dark flavor to a candy that can otherwise seem a bit too sweet. You can use any nut of your choice in this brittle--I like it with hazelnuts (to mimic the taste of Nutella!) but it's also excellent with cashews, almonds, peanuts, or any other nut-like substance else you might want to add.
