Pumpkin Na-what-o bars? Nanaimo Bars are named after the city of Nanaimo in British Columbia. They're best known as a no-bake bar cookie, but I think they make a smashing candy when cut into small squares. They have layers of different flavors and textures, and they're so rich a small bite or two is the perfect serving. The typical Nanaimo Bar is made with a chocolate base, vanilla buttercream center, and a chocolate topping.
That's all well and good, but it's October! We must shove pumpkin into every recipe we make! Therefore, I give you: Pumpkin Nanaimo Bars. These beauties have the traditional chocolate crust, but the filling is pure pumpkin, a luscious and creamy pumpkin buttercream with hints of spices like cinnamon and ginger. The chocolate layer on top adds more flavor and a lovely chocolate shine, making these the perfect festive touch for a fall party or celebration.
