Candy corn may be a fun Halloween classic, but I think we can agree it's not the most sophisticated candy out there. The flavor profile is basically sugar, with fragrant top notes of sugar, a subtle sugar undercurrent, and a finishing sugar bouquet that lingers on the tongue. When I get tired of eating it plain, I like to pair it with chocolate to make candies that are a bit more interesting, flavor and texture-wise.
These Candy Corn Truffles are a classy way of getting your candy corn fix. Chopped-up bits of candy corn are studded throughout a rich, creamy white truffle filling, then the dipped truffles are finished with a whole candy corn on top. To make these really special, you could add your favorite flavoring extract (almond? lemon? orange?) to the white chocolate filling.
Candy Corn Bark
combines candy corn, two kinds of chocolate, and crispy rice cereal for a fun, easy Halloween treat. I love the contrast between the chewy and crunchy textures, and the swirled design on top is always a crowd-pleaser.
Finally, Candy Corn Medallions might literally be the easiest candy I've ever come up with! They're simple chocolate discs topped with candy corn in a variety of patterns. Because it's so simple, this is a perfect recipe for young children to help with. Let them create the drops and place the candies, then enjoy the fruits of their labors!
