If you want to enjoy a sweet treat this week, but are feeling a little overwhelmed by all of the pie in your recent past, meringues just might be the answer. These little cookie-candy hybrids are made with egg whites and a touch of sugar, but not much fat, so they're light on the calories AND on the tongue. For this version of Snowcaps Chocolate Meringues, I added a little cocoa powder to give them a rich chocolate taste. You'd never know it from their flavor, but they're probably the "lightest" chocolate candy I can think of. These delicate little candies are finished with a light dusting of powdered sugar, so they look like snowy mountain peaks. I think this makes them perfect for the winter season, although they taste great anytime you're craving a low-calorie chocolate treat.
