At first glance these may look like simple gingerbread man cookies, but they're actually something much more fun: Gingerbread Marshmallows! They have the flavor and appearance of gingerbread men, but the soft, plush texture of the best homemade marshmallows. They're made with molasses, ginger, cinnamon, and three other spices, so they're packed with flavor. I cut mine out using a miniature gingerbread man cookie cutter, then decorated them with white chocolate faces. If you don't want to go this route, you can cut them up into the usual squares or rectangles. Try adding them to a mug of hot apple cider or hot cocoa, or pair them with white chocolate and cinnamon graham crackers for the ultimate winter s'mores recipe!
