Brown Butter Fudge

Hey, fudge fanatics! I've decided that this is going to be Fudge Week on the ole candy blog--a week of some of my favorite fudge recipes, new and old! To start things off, I'm bringing back an oldie but a goodie: Brown Butter Fudge. I first made this unusual treat back in 2008, and it was one of my first experiences cooking with brown butter. These days, I'm a brown butter pro, using it in everything from frostings to cookies, but back then it was unfamiliar to me.

What a discovery! The way plain butter flavor transformed into a nutty, caramelized flavor, just by being simmered on the stovetop, was a revelation! This fudge makes the most of the browned butter flavor by not requiring many other flavorings, so the nutty taste can shine through.
