For a long time I told myself I didn't like pistachio desserts. I think it all dates back to a few traumatic childhood experiences, where I mistook pistachio ice cream for my favorite mint chocolate chip ice cream one too many times. (That was more disappointment than a child could handle.) I finally grew up a little, gave pistachio another chance, and now I'm a total convert. I love its flavor, and I think its sweetness and mild taste makes it the perfect addition to many candies. This fudge actually has two sources of pistachio power: pistachio pudding mix and toasted pistachios. The pudding mix is added to the white chocolate-based fudge when it's finished cooking, and it gives it a lovely green color and a mild, nutty flavor. A handful of chopped pistachios adds extra flavor and a great crunch. I think this fudge is perfect as-is, but you can also drizzle chocolate on top, or dip the pieces in melted chocolate for an extra treat.
