There was a time when it seemed like EVERY restaurant had a lava cake on its menu. You couldn't go out to eat without being offered a lava cake at every course. I would snark more about the lack of originality, but I can't really blame anyone--lava cakes are delicious! The combination of a fully baked outer cake layer and a gooey, runny chocolate interior is pretty phenomenal. I was inspired by this popular dessert and decided to create my own candy version of the lava cake. Like their namesake, these Lava Cake Truffles have a soft, melting chocolate interior. I've filled a normal chocolate cake ball with an extra-soft truffle, so when they're served at room temperature, the truffle is soft and supple. It doesn't quite flow like lava, but it is a wonderful taste and textural contrast to the cake. The whole package is dipped in chocolate, to make them the perfect portable, pop-able dessert, no pricey restaurant meal required!
