I first tried cake truffles several years ago, and immediately fell in love. Moist, frosting-packed cake slices have always been my favorite thing--and cake truffles combine all of these elements into a small, bite-sized package. What's NOT to love? You can make cake truffles with any flavor of cake andf frosting, but Red Velvet Cake Truffles are my favorite variation of this popular candy. To make them, you simply mix crumbled red velvet cake with cream cheese frosting until it holds together, then roll it into balls and dunk it in chocolate. The method is simple, but the results are surprisingly good. They're a really fun change from typical truffles, and they make an excellent party dessert instead of traditional cake or cupcakes. You can also insert lollipop sticks and make cake pops using this same recipe!
