These Red Velvet Truffle Cups came out better than I could have hoped! They start with a white chocolate ganache that's flavored with red velvet cake mix and a touch of cocoa powder to give them that distinctive cocoa and buttermilk taste so familiar to red velvet cake. After it's chilled, the ganache is whipped until it's light and fluffy. It's gorgeously soft and silky, but still firm enough to hold its shape when piped. After being piped into dark chocolate cups, they're finished with a pinch of sprinkles. I love these because they have the taste of cake but the texture of frosting.
Another option is to use the whipped red velvet ganache as a candy filling when making molded truffles. It's not firm enough to roll and dip on its own, but you can use it to fill truffles, like in this tutorial for making molded candies. Consider making some red velvet-filled hearts for a certain holiday coming up that rhymes with "Shmalentine's Shmay." Your valentine will thank you!
