Chocolate Salami

Salami and chocolate don't usually belong in the same sentence, much less the same mouthful. However, this recipe for Chocolate Salami has changed the way I think about meat-shaped desserts! Cake crumbs, ganache, fruit, and nuts are combined to form a beautiful log of chocolate that bears a striking--some might say disturbing--resemblance to salami.

I don't know about you, but at my house there's always an odd assortment of scraps left over after the holidays--a few pieces of leftover cake, some mixed nuts, dried fruit from gift baskets, and chocolate bars always seem to be banging around the kitchen counters. This is the perfect way to use up all those odds and ends and turn them into something new--and amazing! Those old, unloved scraps get new life when mixed with chocolate ganache, formed into a log, and frozen. After the log is dusted with powdered sugar and sliced, you can enjoy this visually stunning, deeply chocolatey treat. Make this for a New Year's party, or stick it in the freezer and eat it in a month or two after you've come out of your holiday-induced sugar coma!
