Pastry brushes are useful for precise application of liquids or coloring. Larger brushes can be used to oil molds or pans to prepare them for sticky candies, and to brush down the sides of saucepans to prevent crystallization when cooking sugar syrups. Smaller brushes can be used to apply candy coloring to molds, to paint finished candies, or to brush chocolate on candy cups to create chocolate shells.
