Before cacao beans even reach the chocolate factory, they are first harvested, fermented and dried in their home country. Only after they have undergone this process are they packed and shipped. It is very important that they be properly fermented and dried, since fermenting influences the fragrance of the beans, and drying ensures that they don’t get moldy during the lengthy transportation and storage process.
