Definition: A candy made from a sugar syrup cooked to a high temperature. Nuts, like peanuts, are a very common addition to brittles. The nuts are added to the hot syrup and the mixture is poured out in a very thin layer, then stretched by hand to make it as thin as possible. Baking soda is sometimes added to produce a light texture. The resulting candy is hard and snaps easily, hence the term “brittle.”
