Caramel

Definition: A confection made from pure cooked sugar or a sugar syrup, often enriched with butter. Caramels can be cooked to a high temperature, resulting in a firm, dark golden caramel, or to a lower temperature, resulting in a softer, chewy caramel. Higher temperatures also provide a darker color and a smokier caramel flavor. Common flavor additions include vanilla, honey, or maple.
