Definition: Often, glacé fruit is simply another name for candied fruit. Sometimes, the term glacé fruit is used to refer to a finishing process wherein candied fruit is moistened, then dipped in ultra-concentrated sugar syrup and left to dry, thus creating a finishing glaze.
