Thread Stage

Definition: Thread stage refers to a specific temperature range when cooking sugar syrups. Thread stage occurs at 223-235 degrees. This stage can be determined by dropping a spoonful of hot syrup into a bowl of very cold water. If the syrup drips from a spoon and forms thin threads in cold water, thread stage has been reached.
