Crunchy Chocolate Peanut Butter Cups

These chocolate peanut butter cups have graham cracker crumbs in the peanut butter filling to give them an extra crunch and flavor boost. Try using chunky peanut butter for even more crunch.

Ingredients:

  • 12 ounces milk chocolate chips
  • 2 tbsp shortening
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 cup powdered sugar
  • 2/3 cup graham cracker crumbs
  • miniature candy cups
  • pastry brush

Preparation:

1. Begin by melting the chocolate chips and shortening together over low heat. Stir occasionally until the chocolate is totally melted and the mixture is smooth.

2. Using the pastry brush, paint the chocolate on the insides of the paper cups. Do this until you have coated about 30 cups.You should have a little bit of chocolate left over. You will use this later to top off the peanut butter cups, so make sure to keep it warm so that it is easy to spread.

3.Put the cups on a cookie sheet in the refrigerator, and let them chill until the chocolate gets firm.

4.Meanwhile, combine the peanut butter and the butter in a saucepan. Melt these ingredients together over medium heat, stirring occasionally. Stir in the powdered sugar and the graham cracker crumbs.

5.Using a small spoon, fill the paper cups with the peanut butter mixture, almost to the top. Now, brush a thin layer of chocolate over the peanut butter, and put the cups in the freezer until they are firm.
