Mango-Coconut Balls

Sweet-tart mango is combined with coconut and a hint of spice in this refreshingly light candy. I added the cayenne powder to mimic the chile-mango flavor combination that is common in Mexican candies. You can omit or adjust the seasoning to suit your taste.

This recipe calls for freeze-dried mango, which is not the same as regular dried mango. I have found mine at Trader Joe’s in 1.7-ounce packages. If you cannot find it, you can try substituting very finely chopped dried mango, but you may need to adjust the amount of fruit or condensed milk to get the right texture. This recipe yields about 2 dozen candies.

Ingredients:

  • 1.7 ounces freeze-dried mango (yields 1/2 cup powdered mango)
  • 1/2 cup sweetened condensed milk
  • 2 cups shredded coconut
  • dash cayenne powder
  • 2/3 cup finely chopped nuts or toasted coconut, for rolling

Preparation:

1. Place the freeze-dried mango in the bowl of a food processor and blend it until it is a fine powder.

2. Scrape the mango powder into a bowl and add the condensed milk, coconut, and cayenne. Stir until the mixture is blended, then cover the top with cling wrap and refrigerate for one hour.

3. Place the chopped nuts or toasted coconut in a shallow bowl or pie tin. Using a teaspoon, scoop a small spoonful of the chilled candy and drop it into the nuts or toasted coconut. Roll it around until it is coated, then roll it into a ball between your palms.

4. Place the finished candy on a plate or baking sheet, and repeat with remaining candy. Serve immediately, or store candy in an airtight container in the refrigerator.
