Potato Fondant

This versatile potato fondant can be served as-is, or used as the base for mint patties, lemon balls, and many other variations. Try experimenting with different flavored extracts and food coloring.

Prep Time: 10 minutes

Ingredients:

  • 1 small potato, boiled, peeled and mashed
  • 3 cups sifted powdered sugar
  • 1 cup unsweetened dried coconut
  • 1 tsp vanilla extract

Preparation:

1. In a large mixing bowl, combine the mashed potatoes, sugar, coconut, and vanilla on low speed.

2. Continue to beat, raising speed gradually, until the candy is well-combined.

3. Cover the candy with cling wrap and refrigerate for several hours to firm up.

4. Turn the candy out onto a cutting board that has been dusted with powdered sugar. Coat your hands with powdered sugar and knead the fondant until it is creamy. Shape the candy into one-inch balls and serve. Fondant can be stored in an airtight container for a week.
