Real pineapple and shredded coconut are mixed with white chocolate to form delectable pina colada clusters. The recipe calls for dried pineapple, but you can substitute fresh pineapple chunks if you desire. To use fresh pineapple, drain the chunks in a colander and pat them dry with paper towels. Chop the chunks into small pieces with a knife and proceed as directed in the recipe.

Ingredients:
- 2 cups white chocolate chips
- 1 tsp rum extract
- 1 tsp coconut extract
- 2/3 cup shredded coconut
- 1/3 cup chopped macadamia nuts
- 1/3 cup chopped dried pineapple
Preparation:
1. Prepare a baking sheet by lining it with aluminum foil.
2. Combine the pineapple, coconut, nuts and extracts in a small bowl and set aside.
3. Place the white chocolate chips in a microwave-safe bowl. Microwave the chocolate until it is melted, stirring every 45 seconds to prevent it from scorching.
4. Stir the pineapple/coconut mixture into the melted chocolate. Quickly scoop spoonfuls of the mixture onto the prepared baking sheet, working before the candy hardens.
5. Place the candy in the refrigerator to set for 15 minutes.
