Strawberry Peanut Butter Bites

Fresh strawberries are filled with a creamy peanut butter and chocolate mixture, then dipped in melted chocolate for a unique and elegant candy dessert.

Prep Time: 15 minutes

Ingredients:

  • 1/2 cup creamy peanut butter
  • 1-1/4 cup semisweet chocolate chips, divided
  • 2 tbsp whipped topping or whipped cream
  • 20-25 large strawberries, rinsed and dried
  • 1 tsp shortening

Preparation:

1. Melt ¼ cup of chocolate chips in the microwave, and allow to cool to room temperature.

2. Slice the strawberries in half diagonally beginning at the right of the stem.

3. In a small bowl, combine the melted chocolate, whipped topping, and peanut butter.

4. Using a piping bag or a knife, pipe or spread a thin layer of chocolate-peanut butter mixture on one half of the cut strawberry. Press the other half of the strawberry back on gently, and set the berry on a baking sheet lined with aluminum foil. Repeat with remaining berries and chill them in the refrigerator for 15 minutes.

5. Melt the remaining 1 cup of chocolate along with 1 tsp shortening. Dip the bottom half of the berries in the melted chocolate and place back on the baking sheet. Refrigerate for 15 minutes or until set. Keep berries chilled until ready to serve. These candies are best eaten within 24 hours.
