Cranberry-Walnut Balls

These candies are sweet-tart with bold cranberry flavor and the richness of walnuts. You can use either fresh or frozen bagged cranberries for this recipe; canned cranberries tend to be overly sweet and might not set properly.

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

  • 12 ounces (1 bag) cranberries
  • 1 cup granulated sugar
  • 1/4 lb walnuts, ground or very finely chopped
  • powdered sugar, for coating

Preparation:

1. Prepare a sheet tray by lining it with waxed paper or foil and dusting the entire surface with powdered sugar.

2. Combine 1 cup water and sugar in a medium heavy-bottomed saucepan over medium-high heat. Stir to completely dissolve sugar, and then stop stirring.

3. Insert candy thermometer and boil mixture until it reaches 240 degrees, or soft-ball stage.

4. Reduce the heat and add the cranberries all at once, stirring to incorporate.

5. Boil for 10 minutes, stirring occasionally, until most of the cranberries have “popped.”

6. Stir in the chopped walnuts and continue boiling, stirring occasionally, until mixture is a thick paste.

7. Pour the paste onto the prepared sheet and allow to cool and set.

8. Coat your hands in powdered sugar and roll candy into walnut-sized balls. Dip in powdered sugar and place in candy cups to serve.

Variations: In addition to powdered sugar, balls can be rolled in shredded coconut or crushed nuts.
