Orange juice and two kinds of citrus zest give these candied nuts a nice flavor boost.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 3 cups walnuts
  • 4 tbsp orange juice
  • 1 tbsp light corn syrup
  • 1.5 cups granulated sugar
  • 1/4 cup fresh orange zest
  • 1 tsp fresh lemon zest
  • 1/4 cup lukewarm water

Preparation:

1. Prepare a cookie sheet by lining it with aluminum foil.

2. Combine water, juice, sugar, and corn syrup in a medium heavy-bottomed saucepan over medium heat. Stir to dissolve sugar.

3. Continue to cook, stirring occasionally, until mixture reaches 240 degrees on a candy thermometer.

4. Remove from heat. Stir in the zests and walnuts, and mix thoroughly.

5. Remove nuts from syrup with a slotted spoon and spread on the prepared baking sheet. Arrange nuts so that they are in a thin layer.

6. Allow to cool and dry thoroughly before storing.[/p
