Once the chocolate-covered cherries are firm, inspect them again and trim them carefully so that they are as round as possible. They should be stored in an airtight container in the refrigerator for a week before consumption to give the fondant time to liquify around the cherries.

These treats look beautiful when placed in individual fluted candy cups. Look for shiny metallic cups for parties, or red foil cups for Christmastime. Bon appetit!
