Peanutty Bars

These treats have intense peanut taste and are made with a sugar substitute. You can add 1 tsp lemon juice to 1 cup milk if you do not have buttermilk handy.

Prep Time: 15 minutes

Ingredients:

  • 1 cup buttermilk
  • 3 tbsp flour
  • ¼ granulated sugar replacer, such as Splenda
  • 2 cups rice crispy cereal
  • 1 cup nonfat dry milk
  • ½ cup chopped peanuts

Preparation:

1. Combine the buttermilk, flour and sugar replacer in a medium saucepan and cook, stirring often, over medium heat until very thick. Remove from heat and allow to cool.

2. Place rice cereal and dry milk in a food processor or blender and process until mixture is very fine and uniform in texture.

3. Stir rice/milk mixture into buttermilk until completely combined.

4. Form into 8 bars and roll in chopped peanuts.
