Pistachio Nougat

Nougat is an aerated candy made from whipped egg whites and a boiled sugar syrup, much like marshmallows. However, unlike marshmallows, nougat is commonly pressed with weights during the drying process, resulting in a compact, dense and chewy candy. Nuts or dried fruit are often added to the candy before it is poured in a pan, covered in rice paper, and pressed under heavy weights for an overnight finishing period. Below you will find traditional nougat recipes, as well as some faster variations that omit some complicated steps. Be sure to check out the step-by-step photo tutorial showing how to make nougat.
