To make sugar corkscrews, sugar is cooked until deeply caramelized and then spiraled to form these decorative corkscrew curls. Sugar Corkscrews add beauty and sophistication to any dessert, and are actually simple to make, once you know what the sugar should look like and how it should behave. To make these sugar corkscrews, you will need:

  • 1 cup of granulated sugar
  • a well-oiled round knife sharpener or well-oiled wooden spoon handle

Begin by melting the sugar: sprinkle 1/2 cup of the sugar in a heavy-bottomed medium saucepan over medium-high heat.
