Orange Caramel Fudge

Orange Caramel Fudge is a dark, sweet fudge made with orange zest, brown sugar, and cinnamon. Other spices, like nutmeg or ginger, can be added in small amounts for a more heavily spiced fudge.

INGREDIENTS:

  • 2 cups brown sugar
  • 1/2 cup heavy cream
  • 1/2 tsp baking soda
  • 1 tsp butter
  • zest from 1 orange
  • 1 cup toasted hazelnuts (or other nuts of your choice)
  • 1 tsp ground cinnamon

PREPARATION:

1. Prepare an 8x8 inch baking pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray.

2. Combine the sugar, cream, and baking soda in a medium saucepan and stir over medium heat until sugar is dissolved.]

3. Cook over medium-high heat, stirring, until mixture boils. Once mixture boils, stop stirring and allow it to cook to firm-ball stage (245 degrees).

4. Remove from the heat and add the butter, orange zest, cinnamon, and nuts. For creamy fudge, allow to cool to room temperature before stirring. For grainier fudge, stir immediately with a wooden spoon. Either way, stir the mixture until it thickens and loses its gloss.

5. Spread fudge in prepared pan and allow to set at room temperature. Once set, cut into 1-inch pieces to serve. Can be topped with reserved orange zest, if desired.
