Sweetened condensed milk and chocolate chips make these chocolate bourbon truffles quick and easy to prepare, and they can be made with a little more bourbon and less vanilla if desired. They are incredibly easy to fix and can be coated with your choice of pecans, plain granulated sugar, or unsweetened cocoa powder. Plan accordingly, as the mixture needs to chill in the fridge for up to four hours before you can roll them in your choice of coating. 

The truffles are similar in flavor to bourbon balls but without vanilla wafers. You can change up to coating options and use other ingredients such as sprinkles or coconut flakes if you'd like. Feel free to omit the bourbon for alcohol-free truffles.

Ingredients

  • 3 cups semisweet chocolate chips

  • 1 (14-ounce) can sweetened condensed milk

  • 1 tablespoon pure vanilla extract

  • 2 tablespoons bourbon whiskey

  • 1/2 to 3/4 cup finely chopped pecans

  • 1/2 cup granulated sugar, or unsweetened cocoa, or very finely chopped pecans

  2. Combine chocolate chips and sweetened condensed milk in a saucepan over low heat. Heat, stirring, until melted and smooth; remove from heat.

  3. Stir in the vanilla, bourbon, and 1/2 to 3/4 cup pecans. Transfer to a small bowl. Cover and chill for 3 to 4 hours, or until mixture is firm.

  4. Working with fingertips, shape into 1-inch balls; roll in finely chopped pecans, sugar, or unsweetened cocoa. Place on a tray or baking sheet, cover loosely, and chill for at least 1 hour.

Tips

  • Use a teaspoon or scoop to get the amount needed from the bowl to make the 1-inch balls.
  • If desired, put each truffle in a decorative fluted paper or foil cup, and keep in a tightly covered container in the refrigerator until giving or serving. Keep these refrigerated, tightly covered.
  • While these truffles should be kept in the refrigerator, you can pull them out about 5 to 10 minutes before serving so they're not as cold.


Recipe Variations

  • Change up the coating toppings: use coconut flakes, colored sprinkles (red and green for holidays, or some assorted color sprinkles for a birthday party), or confectioners' sugar.
  • Omit the bourbon for an alcohol-free truffle.
  • Adjust the amount of bourbon and vanilla to your taste.

How to Store

  • Truffles can be kept in an airtight container in the refrigerator for up to two weeks.
  • Chocolate bourbon truffles can be frozen and kept for up to three months. Roll them but do not put your choice of coating on them. Place them in a freezer-safe container and put in the freezer. When ready to use, thaw overnight in the refrigerator and then roll in the coating.
